ORGANOLEPTIC CHARACTERISTICS
Colour: light straw yellow, with light greenish reflections.
Bouquet: intense floral, fresh and fruity.
Taste: intense and persistent, acidulous, with a delicate and characteristic bitter vein on the finish.

PRODUCTION AREA
Territory surrounding the winery, characterized by medium-textured soils composed of clayey limestone of Miocene origin, medium hilly location, sub-arid climate.
PRODUCTION TECHNOLOGY
After a careful selection of the most suitable parcels, the grapes undergo a destemming followed by a soft pressing. The must obtained is clarified by cold static decantation and the clean fraction is inoculated with selected yeasts. Fermentation is carried out at temperatures of 14-16°C for about fourteen days. After fermentation, the wine remains in contact with its noble lees for about 45 days and is bottled in the spring following the harvest to keep its freshness intact.
AGING
In ideal storage conditions, it withstands a further refinement period of about 2 years starting from the bottling date.
