PRODUCTION AREA
Territory surrounding the winery, characterized by medium-textured soils composed of clayey limestone of Miocene origin, medium hilly location, sub-arid climate.
PRODUCTION TECHNOLOGY
After a cold maceration on the skins for one night, the must is left to rest for 12 hours at a low temperature in order to delicately clarify it. Inoculation with selected yeasts from the clean part and fermentation at 14°C for about 14 days. A racking after fermentation starts the refinement period in contact with the noble lees for the entire period preceding bottling.
AGING
It is preferable to drink it one year after the harvest, but its structure allows for long periods of refinement.

COMBINATIONS WITH FOOD
Ideal as a combination with important seafood dishes if tasted young, or with medium-aged cheeses. A few years after the harvest it becomes an ideal meditation companion.
