ORGANOLEPTIC CHARACTERISTICS

PRODUCTION AREA
Territory surrounding the winery, characterized by medium-textured soils composed of clayey limestone of Miocene origin, medium hilly location and sub-arid climate.
PRODUCTION TECHNOLOGY
Destemming, cold maceration for about 6 hours. After racking, the must obtained is clarified by cold static decantation and the clean fraction is inoculated with selected yeasts. Fermentation is carried out at a temperature of 14°C for about fourteen days. Once fermentation is complete, the wine is racked off and stored at a low temperature to keep its characteristics of freshness and fragrance intact.
AGING
It is a wine that offers the best of its characteristics if consumed within the year following the harvest.
